Our Story
Plantain Tree was founded by Ronaldo Jackson and Lafara Locke who are both originally from Jamaica but later migrated to the U.S. and found home in the magical ski town Crested Butte Colorado, in the Gunnison valley. It is in every form a celebration of Jamaican cuisine with a focus on the tropical and versatile fruit -PLANTAIN. Our journey began with a passion for the rich and diverse flavors of Jamaican food, and a desire to share it with our town. We started by offering catering and private chef services, and that matured into our original dream of taking our cuisine to the streets of Crested Butte with our food truck. However in efforts to not rob the community of the food and experiences they fell in-love with and our desire to survive the winter, we bargained deals with already existing businesses that allowed us to run dining services in Gunnison and Crested Butte south. Join us on this delicious journey as we explore the many ways Jamaicans use plantains in their dishes and create a few of our own!
